How to make CBD infused Hemp White Chocolate bars



CBD extract is gaining popularity as a natural alternative for treating chronic pain, anxiety, and sleep disorders. Sweet and nutty with a hint of green, here’s a recipe to deliver all the beneficial effects of CBD in the tastiest of ways!

Ingredients:
➤ 330g | 1 ½ cup | 33% Cocoa butter
➤ 320g | 1 ½ cup | 32% Granulated cane sugar
➤ 200g | 1 cup | 20% Milk Powder or Coconut Cream powder
➤ 150g | 1 cup | 15% Dehulled Hemp seeds
➤ As prescribed CBD extract oil

Directions for roasting hemp seeds:

1. Preheat the oven to 300°F/150°C.
2. Place the Hemp seeds in a single layer on a baking sheet, and roast for 25 minutes, or until they start to smell delicious.
3. Allow the seeds to completely cool.

Directions for making Hemp-White Chocolate :

4. Gently melt the cocoa butter in a pan or in the microwave, making sure not to exceed 160°F / 70°C. Once the butter has melted, add it into your Refiner.
5. Slowly add the granulated sugar, ½ cup at a time. Make sure to allow the sugar to fully incorporate before adding more.
6. Add the Coconut cream powder or full-fat milk powder and let refine for about 30 minutes.
7. If necessary, gently increase the temperature using a blow dryer or a heat gun (while never exceeding 140°F/60°C).
8. Once the almond paste is smooth and fluid, start adding the roasted Hemp seeds ¼ cup at a time, allowing it to fully incorporate before adding more. Process for about 6 hours and check if you are pleased with the consistency.
9. Once you are pleased with your Hemp-Gianduja White Chocolate, remove it from the Refiner and either temper right away or allow it to solidify and set aside for later use.

Directions for infusing CBD:

For this step of the preparation, choose chocolate molds with well-defined sections, this will help you calculate the number of drops you will need per portion.

For example, if using a chocolate mold for bars of 100gr, with 8 squares, like in the picture below, you can calculate each square as a single portion.

Depending on the desired effect and the strength of your CBD extract, you can decide you add between 1 and 3 drops per portion, for a total of 8 squares of chocolate with 8-24 drops each.

Temper your Hemp-Gianduja and take 100gr aside.
Add the desired number of drops directly into the tempered chocolate and incorporate fully.
Pour the chocolate into the mold and let solidify completely.

Storage: Up to 6 months in a cool, well-ventilated place in an airtight container.

What if I want to make more than 1 chocolate bar?
In this case, you can keep calculating the number of drops per portion and multiply it by the number of bars you wish to produce.

My CBD extract has a very strong flavor, is it normal?
Yes, CBD tends to have a very strong flavor, if it’s too strong for you then try adding less to the chocolate.
